Collins Pub is one of my favorite places in Seattle, and only partially because it isn’t far from where I live. The combination of a great beer list and good food is the perfect week night destination for after work, or before a game at one of the stadiums. It has been quite a while since Collins Pub has hosted a beer dinner, but some of my favorite beer/food experiences in Seattle have come at dinners there. A dinner featuring beers from Hair of the Dog sticks out as a favorite.
On Saturday, January 26, Collins Pub will have members of the outstanding Fort George Brewery in town for a four course beer dinner. According to owner Seth Howard, “We will be pouring a few exclusive barrel aged beers, their cool, continually evolving IPA called beta, and roses on roses…”
The food menu looks to include dishes like “roasted leek and Dungeness chowder, coffee rubbed smoked pork tenderloin, chocolate caramel tarte with malted whipped cream and bacon brittle”.
